It can get cold in upstate New York where Inez Milholland grew in Essex County. Inez Milholland is America’s suffrage martyr and November 25, 2016 was the 100th anniversary of her death.
We’re preparing the Inez Milholland French Onion Soup at Suffrage Wagon Cooking School. Watch the video for inspiration and try this recipe.
Inez Milholland French Onion Soup
Soup ingredients: 1/2 cup butter, 2 tablespoons olive oil, 4 cups thinly sliced onions, four cans of beef broth, 1 teaspoon dry thyme, optional flour to give body to the soup, salt and pepper.
Soup topping: 4 slices crusty bread, 4 slices Provolone cheese, 2 slices Swiss cheese, 1/4 cup Parmesan cheese.
Process: Saute onions in olive oil and butter slowly until tender. Stir in a tablespoon of flour. Add broth, sherry and thyme. Add salt and pepper. Simmer for a half hour. Use oven safe bowls when ladeling soup into four bowls. Place a slice of bread on top and layer each bread slice with provolone, Swiss and Parmesan cheese. Broil in oven until bubbly.
